The Brownies Everyone Asks Me to Bring
Trust me on this one. These brownies have absolutely no business being this good.
They are thick, gooey, deeply rich chocolate brownies with that perfect fudgy center and slightly crackly top that makes you go back for “just one more bite.”
And yes, the main ingredients are black beans and avocado.
I know.
Fourteen years ago, when I first stumbled across this recipe during the early years of my gluten-free celiac journey, I had exactly the same reaction:
Black beans? Avocado? In brownies? What?????!!
At the time, I was three years into learning how to eat gluten free and desperately craving a truly GOOD brownie. Not a dry gluten-free brownie. Not a “good for gluten free” brownie. An actual rich, indulgent, chocolate brownie.
Then I found just the right recipe at Ambitious Kitchen and I never looked back.
Honestly, this recipe is what brought me fully to the gluten-free baking party. Up until then, I think I was mostly just trying to survive gluten free baking. These brownies were the first recipe that made me realize gluten-free desserts could actually be incredible in their own right.

Over the years, these brownies have become one of my most requested desserts. I bring them to parties, gatherings, and potlucks, and people always ask for the recipe. Most have absolutely no idea what is in them until after they have already eaten two.
Why They Work
The black beans create the unbelievably fudgy texture while the avocado adds richness without making them heavy. Together, they somehow turn into pure chocolate decadence.
But the real secret is the cocoa powder.
My Tips After 14 Years of Making Them
Use Good Cocoa Powder
This is absolutely key to making the recipe work.
A high-quality cocoa powder gives these brownies their deep chocolate flavor and rich color. I personally love Navitas cacao powder. It adds incredible depth and honestly a little extra punch that makes one of these brownies the perfect afternoon pick-me-up.
Double the Recipe
Always.
A double batch fits perfectly into a 13 x 9 glass baking dish, and trust me, they disappear fast.
Underbake Them Slightly
This is probably my biggest secret.
I like my brownies super fudgy and gooey, so I intentionally underbake them just a bit. In my oven, 25 minutes is usually perfect for a doubled recipe.
They continue setting as they cool, leaving you with that rich, almost truffle-like center.
Final Thoughts
